What is it? ​

Ammonium hydroxide is an aqueous solution of ammonia used in foods as a processing aid and acidity regulator, and in cocoa processing and fermentation support. It is volatile and generally leaves no residue.

Consumer Advice ​

Food-grade ammonium hydroxide is used as an acidity regulator and processing aid, for example to adjust pH in beverages and foods and in caramel-colour production. Most of the ammonia evaporates or is neutralised during processing, leaving negligible residue. Used to food-grade standards it is safe, with no pungent smell remaining in the finished product.
