Sodium alginate is the sodium salt of alginic acid, extracted from brown seaweed. It is a common thickener, stabilizer and gelling agent used in ice cream, drinks, noodles, sauces and molecular-gastronomy 'spherification'. It forms a gel when it meets calcium, so it is often paired with calcium salts. It is seaweed-derived and safe at normal levels; in large amounts it simply behaves as dietary fiber.
