Sodium phosphates are multifunctional phosphates for emulsifying and moisture; safe within limits but watch phosphorus intake.
Consumer Advice
Sodium phosphates are the sodium salts of phosphoric acid, used as emulsifying salts, moisture retainers, buffers and acidity regulators in processed cheese, ham, sausages, drinks and convenience foods to improve texture and hold water. They are safe at authorised levels, but both phosphate and sodium matter: very high intakes are associated with kidney and bone concerns, and those on low-sodium diets or with kidney problems should be mindful.
