oxidised starch

Basic Information

FieldContent
Chinese nameoxidised starch
English nameoxidised starch
INS/E numberINS 1404
Functional classEmulsifier, Stabilizer, Thickener
Year adopted1965
Approved byAustralia/New Zealand (FSANZ), European Union (EFSA)

What is it?

Oxidised starch is a chemically modified starch produced by mildly oxidising native starch with food-grade oxidants (e.g. sodium hypochlorite, hydrogen peroxide); carboxyl and carbonyl groups form, giving stable viscosity and improved film/gel properties.

Source

Natural:玉米、马铃薯、木薯等食用淀粉

Why is it used?

  • Stable low viscosity with high film-forming ability
  • Improves texture and clarity
  • Used in confectionery, sauces and edible films
  • Stabiliser and thickener
  • Enhances anti-staling and water retention

Common Foods

  • Confectionery and coatings
  • Sauces and soups
  • Bakery products
  • Edible films and coatings
  • Dairy products
  • Meat products

Safety

ADI (Acceptable Daily Intake):Not applicable (evaluated, no limit set)

Concerns:

  • 须严格控制残留氧化剂
  • 糖尿病人须计入碳水化合物

Usage Standard

China:GB 2760《食品安全国家标准 食品添加剂使用标准》;GB 29950 食品安全国家标准 食品添加剂 改性淀粉

International:

  • EU Regulation 1333/2008 Annex II (E 1404)
  • FDA 21 CFR 172.892 (modified starches, oxidised)
  • Codex GSFA (INS 1404)
  • FSANZ Food Standards Code (1404)
  • JECFA Monograph (Oxidised starch)

In a nutshell

Oxidised starch is an oxidised modified starch with stable viscosity and good film-forming, safe with no ADI (residuals controlled).

Consumer Advice

Oxidised starch is a modified starch treated with oxidising agents, offering lower gelatinisation temperature, clear pastes, and reduced retrogradation. It is used as a thickener and gelling agent in sauces, baked goods, and meat products. It is safe within approved limits; it is normally made from plant starches such as corn or potato, and gluten-sensitive people should confirm the source on the label.
