Sorbitan tristearate (Span 65) is an emulsifier made from sorbitol and three molecules of stearic acid. It is strongly lipophilic and is often combined with hydrophilic emulsifiers in cake mixes, margarine, chocolate, ice cream and dressings to stabilise emulsions and improve texture. It is metabolised normally and is considered safe at approved levels.
