What is it?
Pectin is a water-soluble polysaccharide (mainly a polymer of galacturonic acid) extracted from citrus peel or apple pomace. It is a gelling and thickening agent; high-methoxyl pectin gels with sugar and acid, while low-methoxyl pectin gels with calcium ions.
