What is it? ​

Triphosphates (tripolyphosphates), mainly sodium and potassium tripolyphosphate, are moisture retainers, emulsifying salts and quality improvers. They have strong metal-chelating ability and are used with diphosphates and polyphosphates for water retention and tenderisation in meat and seafood.
