What is it?

Powdered cellulose and microcrystalline cellulose are odourless white powders derived from plant fibre (e.g. wood pulp, cotton linters) by chemical and mechanical treatment. They are anticaking agents, thickeners and fillers. Microcrystalline cellulose is made by partial hydrolysis of cellulose followed by mechanical disintegration and has excellent suspending and stabilising properties.

Powdered and microcrystalline cellulose are plant-fibre anticaking, thickening and bulking agents used in powders and low-fat foods.

Consumer Advice

Cellulose, including microcrystalline cellulose, comes from plant cell walls and is the most common dietary fibre in nature. In food it is used as a thickener, stabiliser, anticaking agent and bulking agent to add volume and improve texture, often found in low-calorie foods, shredded cheese and dressings. It is not digested by the body and acts as dietary fibre; small amounts aid gut health, though large amounts may cause bloating or mild discomfort.
