What is it?
Lipases are enzymes that catalyse the hydrolysis of fats (triacylglycerols) into fatty acids, glycerol and diglycerides, produced by microbial fermentation, animal tissue or plant extraction. In foods they improve flavour, texture, emulsification and processing.
