What is it? ​

Tartaric acid esters of mono- and diglycerides are ester derivatives formed by reacting mono-/diglycerides with tartaric acid. They are emulsifiers and stabilisers with relatively strong hydrophilicity, improving dough strength and emulsifying stability, used in bakery and margarine.
