What is it?
Sucrose esters of fatty acids are non-ionic surfactants obtained by esterifying sucrose with edible fatty acids. They are emulsifiers, stabilisers and foaming agents whose hydrophilic-lipophilic balance can be tuned over a wide range; they are used at low levels and are considered very safe, with broad applications.
