What is it? ​

Methyl ethyl cellulose is the mixed methyl and ethyl ether of cellulose, a white to pale-yellow powder soluble in cold water to form viscous solutions. It is a thickener, stabiliser and film-former combining properties of methyl and ethyl cellulose, used in coatings and texture modification.

Consumer Advice ​

Ethyl methyl cellulose is a cellulose ether modified with ethyl and methyl groups, used as a thickener, foam stabiliser and emulsifier in baked goods, dressings and beverages to improve texture and stabilise air bubbles. Like other celluloses it is not digested or absorbed, and JECFA has evaluated it as safe within permitted limits. Its use in food is relatively limited today.
