What is it? ​

Sodium erythorbate (sodium D-erythorbate) is the sodium salt of D-erythorbic acid; it is water-soluble with the same antioxidant and colour-fixing action as erythorbic acid. It is widely used as an antioxidant and colour-fixing aid in cured meats, beverages and other foods.

Consumer Advice ​

Sodium erythorbin is the same substance as INS 316 (sodium erythorbate); 318 is an obsolete historical code that is no longer used on modern labels. It serves as an antioxidant in processed meats and drinks to prevent oxidation and discolouration and is safe. Note that it is different from sodium ascorbate (INS 301, the sodium salt of vitamin C); do not confuse the two.
