What is it? ​

Benzoic acid (INS 210) is an aromatic acid naturally present in some berries, usually produced synthetically as a preservative; it mainly inhibits yeasts, moulds and some bacteria, especially effective in acidic foods.

Benzoic acid is a low-cost preservative widely used in acidic foods, safe but with a noted benzene-formation risk.

Consumer Advice ​

Benzoic acid occurs naturally in berries such as cranberries and plums; the synthetic form is used as a preservative against yeasts and some bacteria in soft drinks, fruit juices, condiments, jams and pickles. Combined with vitamin C it can form tiny amounts of benzene, so some regulators advise against storing such drinks hot for long periods. It is safe for most people, but a minority sensitive to benzoates may develop hives or asthma-like symptoms. Europe and other regions are gradually replacing it with potassium sorbate. At legal levels it is considered safe.
