Tannins (food-grade tannic acid) are natural polyphenols extracted from plants such as gallnuts, acorns and grape seeds. Tannins are approved in the EU (E181) and are used as processing aids in China. They are considered safe at approved levels, though very large intakes can reduce iron absorption.
