What is it? ​

Benzoyl peroxide is an oxidising agent used mainly as a flour bleaching and maturing agent that whitens flour and improves baking quality.

Benzoyl peroxide was once a common flour bleaching and treatment agent that whitened wheat flour and accelerated its ageing. Because of safety concerns it has been banned in flour in China since 2011 and is also prohibited in the EU and elsewhere. Its use in food is declining; consumers may look for flour labelled 'unbleached' or 'no additives'.
