What is it? ​

Calcium propionate is the calcium salt of propionic acid, used mainly as a mould-inhibiting preservative in bakery and, being a calcium source, can also fortify nutrition.

Consumer Advice ​

Calcium propionate is a very common anti-mould preservative in bread and cakes; it prevents mould growth, extends shelf life and also supplies a little calcium. It has been extensively evaluated by regulators worldwide and is safe at authorised levels. Rare individual sensitivity has been discussed in a few studies, but the overall evidence shows it is safe for the vast majority of consumers.
