What is it?
Acetylated oxidised starch is a modified starch produced from edible starch by first oxidising (e.g. with hypochlorite) then acetylating (with acetic anhydride); it combines the properties of both treatments. It has good cold-water swelling, stable viscosity, anti-staling behaviour and holds structure under acidic and heated conditions.
Source
Natural:玉米、马铃薯、木薯等食用淀粉
Why is it used?
- Provides stable thickening and gelling
- Improves freeze-thaw and heat stability
- Resists staling and extends shelf life
- Holds viscosity in low-pH acidic foods
- Stabiliser/emulsifier aid in sauces, canned and frozen foods
Common Foods
- Dressings and salad sauces
- Canned and frozen foods
- Soups and gravies
- Bakery premixes
- Confectionery and dairy products
Safety

Concerns:
- 糖尿病患者需计入碳水化合物
- 残留氧化剂和乙酰基须符合限量
Usage Standard
China:GB 2760《食品安全国家标准 食品添加剂使用标准》(改性淀粉,按生产需要适量使用)
International:
- EU Regulation 1333/2008 Annex II (E 1451)
- FDA 21 CFR 172.892 (modified starch)
- Codex GSFA (INS 1451)
- FSANZ Food Standards Code (modified starches, GMP)
In a nutshell
Acetylated oxidised starch is a dual-modified starch that is safe as a thickener/stabiliser within approved limits.
Consumer Advice
Acetylated oxidised starch is a dual-modified starch processed by oxidation and acetylation, giving stable viscosity and clear pastes. It is used as a thickener and stabilizer in sauces, baked goods, meat products, and dairy. It is safe within approved limits; it is normally made from plant starches such as corn or potato, and gluten-sensitive individuals should confirm the source when purchasing.
