Consumer Advice

Aluminium ammonium sulfate (ammonium alum) is an alum-type salt used like potassium alum as a raising agent in fried dough and pastries and as a firming agent for aquatic products. For the same reasons of aluminium safety, China strictly limits aluminium additives with residue caps and encourages aluminium-free leavening. Consumers should eat fried dough products in moderation and check food labels.
