What is it? ​

Acetic acid esters of mono- and diglycerides are acetate derivatives formed by reacting mono-/diglycerides with acetic anhydride. They are emulsifiers and stabilisers with stronger hydrophilicity than plain mono-/diglycerides, giving better emulsifying and foaming properties, used in bakery and emulsified systems.
