Consumer Advice ​

Sodium acetate and sodium hydrogen acetate (sodium diacetate) are sodium salts of acetic acid used as acidity regulators, preservatives and buffers in bread, baked goods, sauces and pickles. They are normal metabolic substances (acetic acid is broken down to water and carbon dioxide), so they are very safe at permitted levels. Most people have no side effects; those on low-sodium diets should simply be aware of cumulative sodium intake.
