Approved byAustralia/New Zealand (FSANZ), European Union (EFSA)

What is it?

Sodium stearoyl lactylate is an anionic emulsifier made by condensing stearic acid with lactic acid and neutralising with sodium. It is lipophilic and interacts with starch and protein to improve dough structure and texture.

Industrial:硬脂酸与乳酸缩合生成硬脂酰乳酸,再用氢氧化钠部分中和成钠盐

Why is it used?

  • Conditions dough by strengthening gluten and improving loaf volume
  • Emulsifies and stabilises oil-water systems
  • Delays starch retrogradation, keeping bread soft
  • Improves emulsion stability in plant-protein drinks and coffee whiteners

In a nutshell

Sodium stearoyl lactylate is a widely used emulsifier and dough conditioner that markedly improves baked goods.

Consumer Advice

Sodium stearoyl lactylate (SSL) is an emulsifier made from lactic acid, stearic acid and sodium. It is one of the most common additives in bread and baked goods, strengthening the dough, increasing loaf volume, softening crumb and slowing staling. It is also used in breakfast cereals and pasta. It is metabolised normally in the body, and JECFA and national regulators consider it safe at standard levels.
