What is it? ​

Sucroglycerides are mixed esters obtained by co-esterifying sucrose with glycerol and edible fatty acids. They are emulsifiers and stabilisers combining features of sucrose and glyceride esters, with an adjustable hydrophilic-lipophilic balance, used to improve texture and emulsifying stability.
