What is it? ​

Sodium phosphates are sodium salts of phosphoric acid (ortho-, pyro-, tripolyphosphates), produced by neutralising phosphoric acid with sodium hydroxide. They are widely used as acidity regulators, emulsifying salts, humectants and quality improvers.

Consumer Advice ​

Sodium phosphates are the sodium salts of phosphoric acid, used as emulsifying salts, moisture retainers, buffers and acidity regulators in processed cheese, ham, sausages, drinks and convenience foods to improve texture and hold water. They are safe at authorised levels, but both phosphate and sodium matter: very high intakes are associated with kidney and bone concerns, and those on low-sodium diets or with kidney problems should be mindful.
