What is it?
Sodium erythorbate (sodium D-erythorbate) is the sodium salt of D-erythorbic acid; it is water-soluble with the same antioxidant and colour-fixing action as erythorbic acid. It is widely used as an antioxidant and colour-fixing aid in cured meats, beverages and other foods.
