What is it? ​

Sodium metabisulfite is the dehydrated dimer of sodium bisulfite; it releases sulfur dioxide in solution and is among the most commonly used sulfite preservatives.

Why is it used? ​

  • Effectively inhibits microbes (especially moulds and yeasts)
  • Prevents oxidative browning and discolouration
  • Maintains colour of seafood (e.g. shrimp)

Sodium metabisulfite is one of the most common sulphite additives, acting as both a preservative and an antioxidant in wine, beer, dried fruit, candied fruit, dried vegetables and shrimp to prevent browning and spoilage. It releases sulfur dioxide in the presence of moisture. It is safe for most consumers, but sulphites are a legally recognised allergen that can trigger bronchospasm in asthmatics; sensitive people should avoid such foods. Strict residue limits apply in all major jurisdictions.
