What is it? ​

Tannins (INS 181) are a class of natural polyphenols found in many plants, with astringent taste and astringency; they are used for colour stabilisation, clarification and some antioxidant purposes.

Consumer Advice ​

Tannins (food-grade tannic acid) are natural polyphenols extracted from plants such as gallnuts, acorns and grape seeds. In food they act mainly as clarifying agents for wine, flavour modifiers and colourings, and they also occur naturally in tea and wine. Tannins are approved in the EU (E181) and are used as processing aids in China. They are considered safe at approved levels, though very large intakes can reduce iron absorption.
