What is it?
Oxidised starch is a chemically modified starch produced by mildly oxidising native starch with food-grade oxidants (e.g. sodium hypochlorite, hydrogen peroxide); carboxyl and carbonyl groups form, giving stable viscosity and improved film/gel properties.
