FieldContent
Chinese nameinvertase
English nameinvertase
INS/E numberINS 1103
Functional classEnzyme preparation
Year adopted1974
Approved byEuropean Union (EFSA)

What is it?

Invertase (sucrase) is an enzyme that hydrolyses sucrose into glucose and fructose (invert sugar), mostly produced by yeast fermentation. In foods it is used to make soft-centred confectionery and prevent sugar crystallisation.

Source

Natural:酵母菌(如 Saccharomyces cerevisiae)等微生物发酵

Why is it used?

  • Converts sucrose to invert sugar for soft-centred chocolates
  • Prevents crystallisation in candies and syrups
  • Improves texture and moisture of pastry fillings
  • Lowers sweetness and enhances flavour
  • Processing aid improving stability

Common Foods

  • Soft-centred chocolates
  • Confectionery and frostings
  • Jams and syrups
  • Bakery fillings
  • Honey products
  • Artificial honey

Safety

ADI (Acceptable Daily Intake):Not applicable (evaluated, no limit set)

Concerns:

  • 须源自安全菌株并声明转因状态
  • 极少数人对酶蛋白过敏
  • 需控制终产品中残留

Usage Standard

China:GB 2760《食品安全国家标准 食品添加剂使用标准》(酶制剂);GB 1886.174 食品安全国家标准 食品添加剂 食品工业用酶制剂

International:

  • EU Regulation 1333/2008 Annex II (E 1103)
  • FDA Enzymes - GRAS (from GRAS organisms)
  • Codex GSFA (INS 1103)
  • FSANZ Food Standards Code (1103)
  • JECFA Monograph (Invertase)

In a nutshell

Invertase is an enzyme hydrolysing sucrose to invert sugar for soft-centred candies and anti-crystallisation, typically with no ADI.

Consumer Advice

Invertase is an enzyme that splits sucrose into glucose and fructose. It is commonly produced from yeast and is used to make invert sugar syrup, soft candies, cream-filled chocolates, and honey substitutes, preventing crystallization and improving texture. It is safe within approved limits, and being yeast-derived, it is suitable for vegetarian, halal, and kosher diets.
