What is it?
Polyglycerol polyricinoleate (PGPR) is a distinctive emulsifier made by esterifying polyglycerol with ricinoleic acid (and some other fatty acids). It is a lipophilic emulsifier and viscosity reducer that markedly lowers the viscosity of fat systems such as chocolate, reducing cocoa-butter need.
