What is it?
Polyglycerol esters of fatty acids are non-ionic surfactants made by esterifying polymerised glycerol (polyglycerol) with edible fatty acids. They are emulsifiers, stabilisers and defoaming agents whose degree of polymerisation and fatty acid type are tunable, giving a wide hydrophilic-lipophilic range and very broad use.
