What is it? ​

Enzymatically hydrolysed carboxymethylcellulose is a low-viscosity modified product obtained by partial enzymatic hydrolysis (cellulase) of carboxymethylcellulose. It is a thickener, stabiliser and emulsifier with lower molecular weight and better solubility/compatibility, providing stability at lower viscosity.

Consumer Advice ​

Enzymatically hydrolysed carboxymethyl cellulose is made by treating CMC with enzymes to shorten its molecular chains, improving solubility and dispersibility. It is used as a thickener and stabiliser in beverages, sauces and dairy products to improve mouthfeel and stability. Like most cellulose additives it is not absorbed by the body and is safe at approved levels.
