What is it? ​

Hydroxypropyl methylcellulose (HPMC) is the mixed hydroxypropyl and methyl ether of cellulose, a white powder that dissolves in cold water to form viscous solutions. It is a thickener, stabiliser, emulsifier and film-former combining the thermogelation of methylcellulose with good cold-water dispersibility, with very broad use.

Consumer Advice ​

Hydroxypropyl methyl cellulose (HPMC) is a modified cellulose used as a thickener, emulsion stabiliser and film former. In food it appears in vegan capsule shells, plant-based meat, baked goods and gluten-free products, where it mimics the elasticity and moisture retention of gluten. It is not absorbed by the body, and JECFA, EFSA and the FDA consider it safe within permitted levels.
