What is it?
Polysorbate 80 (Tween 80) is a non-ionic surfactant made by ethoxylation of sorbitan monooleate. It is the most widely used polysorbate emulsifier, with strong hydrophilicity for beverage, dairy and frozen dessert emulsions.
