What is it? ​

Lecithins are natural mixtures extracted from oilseeds such as soybean and sunflower, or from egg yolk, mainly phosphatidylcholine and phosphatidylethanolamine. They act as both emulsifiers and antioxidants and are widely used as processing aids.
