What is it? ​

Propionic acid is a naturally occurring short-chain fatty acid produced by fermentation of sugars or synthetically, used mainly as a mould-inhibiting preservative.

Consumer Advice ​

Propionic acid and its sodium and calcium salts are common mould-inhibiting preservatives used mainly in bread and other baked goods to prevent mould growth and 'rope' spoilage. Propionic acid occurs naturally in some fermented foods and in the human gut as a normal metabolite. It is recognised as safe by major food-safety bodies at permitted levels and causes no side effects for most people.
