Consumer Advice
Sodium sorbate is the sodium salt of sorbic acid and works the same way as a preservative against moulds, yeasts and bacteria. Note that it is not authorised for food use in the EU, which allows only sorbic acid, potassium sorbate and calcium sorbate; China likewise mainly permits potassium sorbate. Its intrinsic safety is similar to sorbic acid, but if it appears on a food label, the product may not follow local regulations, so be cautious.
