What is it?

Acetylated starch (INS 1420) is a modified starch esterified with acetic anhydride or vinyl acetate; it has a lower gelatinisation temperature, stable viscosity and good anti-staling properties.

Source

Natural:玉米、马铃薯、木薯等食用淀粉 + 乙酸酐/醋酸乙烯酯

Why is it used?

  • Lowers gelatinisation temperature and improves texture
  • Stable viscosity and anti-staling
  • Used in sauces, baking and frozen foods
  • Thickener and stabiliser
  • Enhances clarity and mouthfeel

In a nutshell

Acetylated starch is an acetyl-esterified modified starch with low gelatinisation and anti-staling, safe with no ADI.

Consumer Advice

Acetylated starch is a modified starch esterified with acetic anhydride, giving stable, clear pastes. It is used as a thickener and stabilizer in sauces, baked goods, jams, and meat products. It is safe within approved limits; it is usually plant-based, but if made from gluten-containing grains such as wheat, gluten-sensitive individuals should check the ingredient label.
