What is it?
Monostarch phosphate (starch sodium phosphate, INS 1410) is a chemically modified starch produced by esterifying native starch with phosphates (e.g. sodium trimetaphosphate, monosodium phosphate); it carries negative charges and gains higher viscosity and freeze-thaw stability.
