What is it?
Acid-treated starch is a physically modified starch produced by treating native starch with a food-grade acid (e.g. HCl) at low temperature, lightly hydrolysed then washed and neutralised; its viscosity and gelatinisation properties are moderately altered.
Source
Natural:玉米、马铃薯、木薯等食用淀粉
Why is it used?
- Reduces viscosity and improves gel/film formation
- Enhances heat and shear stability
- Improves texture in confectionery and sauces
- Stabiliser and thickener
- Clean-label mildly modified starch
Common Foods
- Confectionery and jellies
- Sauces and soups
- Bakery products
- Dairy products
- Meat products
- Instant noodles
Safety
ADI (Acceptable Daily Intake):Not applicable (evaluated, no limit set)
Concerns:

In a nutshell
Acid-treated starch is a mildly acid-modified starch improving viscosity and texture, safe with no ADI.
Consumer Advice
Acid-treated starch is a modified starch that swells in cold water to form a thin paste, used as a thickener, gelling agent, and filler in candy, meat products, and baked goods. It is safe within approved limits; although usually made from corn or potato, if derived from gluten-containing grains such as wheat, people with gluten sensitivity should check the label for the source.
