lipases

Basic Information

FieldContent
Chinese namelipases
English namelipases
INS/E numberINS 1104
Functional classFlavour enhancer
Year adopted1974
Approved byAustralia/New Zealand (FSANZ)

What is it?

Lipases are enzymes that catalyse the hydrolysis of fats (triacylglycerols) into fatty acids, glycerol and diglycerides, produced by microbial fermentation, animal tissue or plant extraction. In foods they improve flavour, texture, emulsification and processing.

Source

Natural:米曲霉、根霉、动物胰脏等微生物/动物源

Why is it used?

  • Releases free fatty acids to enhance cheese and meat flavour
  • Improves dough and baking quality
  • Develops dairy flavour (cheese, butter)
  • Used in lipid modification and structured lipids
  • Processing aid enhancing stability

Common Foods

  • Cheese and dairy
  • Bakery products
  • Meat and meat products
  • Butter and margarine
  • Functional lipids
  • Infant formula

Safety

ADI (Acceptable Daily Intake):Not applicable (evaluated, no limit set)

Concerns:

  • 须源自安全菌株并声明转因状态
  • 极少数人对酶蛋白过敏
  • 部分动物源脂肪酶需考量宗教/过敏原

Usage Standard

China:GB 2760《食品安全国家标准 食品添加剂使用标准》(酶制剂);GB 1886.174 食品安全国家标准 食品添加剂 食品工业用酶制剂

International:

  • EU Regulation 1333/2008 Annex II (E 1104)
  • FDA Enzymes - GRAS (from GRAS organisms)
  • Codex GSFA (INS 1104)
  • FSANZ Food Standards Code (1104)
  • JECFA Monograph (Lipases)

In a nutshell

Lipases are fat-hydrolysing enzymes enhancing cheese, meat and bakery flavour, typically with no ADI.

Consumer Advice

Lipases are enzymes that break down fats, used in cheese ripening, baking, and oil processing to improve flavor and texture. They have multiple sources: some are produced by microbial fermentation, but others come from animal tissues such as pig or calf pancreas and calf stomach. Vegetarians and halal/kosher consumers should choose products clearly labeled as microbial-derived. They are safe when used according to regulations, leaving only trace residues in food.

Dietary Restrictions

  • Vegan: ❌
  • Halal: ❌
  • Kosher: ❌
