glucose oxidase

Basic Information

FieldContent
Chinese nameglucose oxidase
English nameglucose oxidase
INS/E numberINS 1102
Functional classAntioxidant
Year adopted1974
Approved byAustralia/New Zealand (FSANZ)

What is it?

Glucose oxidase is an enzyme that catalyses the oxidation of glucose to gluconic acid and hydrogen peroxide, mostly produced by fermentation of Aspergillus niger. It is used in foods for deoxygenation, preservation and improvement.

Source

Natural:黑曲霉(Aspergillus niger)等微生物发酵

Why is it used?

  • Removes residual oxygen to delay oxidation and mould growth
  • With catalase for preservation and gluten improvement
  • Improves egg products and flour quality
  • Oxygen-scavenging in packaging to extend shelf-life
  • Processing aid enhancing stability

Common Foods

  • Bakery products and flour
  • Egg products (liquid whole egg)
  • Beverages and juices
  • Wine and brewing
  • Dehydrated vegetables
  • Gummy candies

Safety

ADI (Acceptable Daily Intake):Not applicable (evaluated, no limit set)

Concerns:

  • 须源自安全菌株并声明转因状态
  • 极少数人对酶蛋白过敏
  • 需控制终产品中酶活性残留

Usage Standard

China:GB 2760《食品安全国家标准 食品添加剂使用标准》(酶制剂);GB 1886.174 食品安全国家标准 食品添加剂 食品工业用酶制剂

International:

  • EU Regulation 1333/2008 Annex II (E 1102)
  • FDA Enzymes - GRAS (from GRAS organisms)
  • Codex GSFA (INS 1102)
  • FSANZ Food Standards Code (1102)
  • JECFA Monograph (Glucose oxidase)

In a nutshell

Glucose oxidase is an oxygen-scavenging enzyme for preservation and improvement in baking, egg products and packaging.

Consumer Advice

Glucose oxidase is an enzyme produced by microbial fermentation (e.g., Aspergillus niger) that catalyzes the oxidation of glucose. It is used as an antioxidant and preservative in beer, wine, fruit juices, and egg products to remove oxygen, stabilize color, and extend shelf life. It is safe within approved limits and is produced without animal ingredients.
